Well- I am just so overwhelmed by what is going on in the world.
These are tumultuous times we are living in. My mind quickly runs to fear when I see the unfolding of events like the huge earthquake that hit Japan on Friday.  I am overwhelmed at the loss and devastation and uncertainty that continues and I am reminded there is one source of strength that is unshakable ONLY ONE!!!!


The LORD is exalted, for he dwells on high; he will fill Zion with justice and righteousness, and 
He will be the stability of your times.....(ESV) Isaiah 33:6
and again -
 "He will be the sure foundation for your times, a rich store of salvation and wisdom and knowledge; the fear of the LORD is the key to this treasure." (NIV - UK version)

In the midst of this, I know that I have NOT been given a spirit of fear, but of power, love and a sound mind. In Christ, though the earth give way and the mountains fall to the sea, the Lord is ever with me and I will not be shaken. I need to stay alert and keep my eyes fixed on Him and not grow weary.....
But, I cannot begin to think or function apart from a good cup of strong coffee....and a sound mind, and the first step I  take to getting there is the Word of God.

Now then, let's get our daily dose of caffeine...
This is a Coffee Toffee Heath Bar Cake- it uses instant coffee- my husband switched over while I was pregnant with our newest addition because I wasn't drinking any- I am surprised at how good it is!!!

Anyhoo, try this recipe - it's easy and it's gooooood!!!!!
Pre-heat your oven to 350 degrees (where's the "degree" symbol on the keyboard?!??!!)
and grease two 9" cake pans the easiest way possible.....

Then, sift or whisk together:
2 c.flour
2 c. sugar
1/4 heaping t. salt

then, in a microwaveable bowl, melt:
 (see-it's almost gone!)
1 c. of butter and
3 T. instant coffee

add to that 1 cup of boiling H2O
then microwave them together on High for 1 min.



add the butter/coffee/water mixture to the sifted dry ingredients.....
(sorry no picture!)
meanwhile, in a large measuring cup- or another small bowl
whisk 1/2 cup milk + 1 t. lemon juice

2 fresh eggs

1 t. soda

and 2 t. vanilla
Stir the egg mixture into the warm batter just till combined
....... ACTION SHOT!!!!!!!

then pour the batter, as evenly as you can, into 2 greased 9" cake pans.
 I used a 4-cup measuring cup to divide them evenly....

bake them at 350  degrees for 19-22 minutes- i like to slightly underbake cakes- just till they don't jiggle in the center anymore and appear mostly dry on top.
Then, in the Magic Bullet that your sweet sister-in-love got you for Christmas, using the flat blade, whip  
1 1/2 cup of heavy whipping cream till it looks like whipped cream (how descriptive is that???) after it's whipped stir in 2 T. of sugar....
then transfer your first cake layer to a serving plate and spread a little less than 1/2 the whipped cream over the top....
you can leave it like this, but to throw it over the top, you can add 3 T. of toffee sauce
( look at tomorrow's blog for the recipe...it will make your cake, your ice cream- and your life so much better!!!!)
then add the remaining cake layer and frost with whipped cream and toffee sauce

then top with Heath Bits and chocolate chunks
then share with your favorite people.....

  3. Tonya, this looks GOOD!! Where do you get your Heath Bar bits? They didn't have them at the store where I usually shop......

    i know they are not as readily available as they SHOULD be. i have seen them at Albertson's before, but you can usually get them at Gerrard's.
